th of July is just around the corner! - 4 dozen premade miniature tart shells or phyllo cups
- 8 ounces of mascarpone cheese
- 3 tablespoons of confectioners ' sugar
- ½ cup of freshly whipped cream
- 1 cup of blueberries
- 1 pint of strawberries, sliced in half, then sliced again to create half circles
In an electric mixer, beat together the mascarpone cheese and confectioners ' sugar until smooth. Then, gently fold in the whipped cream.
On a large serving platter, arrange the tart shells of phyllo cups into six rows of eight, in a rectangular shape. Fill them with the mascarpone mixture. Top the nine shells or cups in the top left corner with a few blueberries each. On the remaining cups or shells, arrange the strawberries to resemble red stripes, leaving half of the mascarpone exposed to reveal white stripes.
