This easy back to school recipe for angel hair pasta with chicken is perfect for a school night.
Can you believe it 's already time to get the kids back to school? Summer flew by, and we 're all gearing up for the first bell of the new school year. You know that the start of the year brings an uptick in busyness, but don 't stress! We want to help, so we 've been collecting recipes that make it easy to throw together a great family dinner on a school night. One of our favorite pasta recipes is perfect for the busy start of the year!
Ease stress when getting the kids back to school with this easy recipe for angel hair pasta with chicken. To make it, you 'll need:
- 8 ounces of angel hair pasta
- 1 pound of boneless skinless chicken breast
- 2 tablespoons of olive oil
- 2 sliced medium carrots
- 1 ½ cup of broccoli florets
- 2 ½ teaspoons of minced garlic
- 1 1/3 cup of chicken broth
- ½ cup+ of grated Parmesan cheese
- 2 teaspoons of dried basil
- ½ teaspoon of salt
Boil a large pot of salted water and cut the chicken into bite-sized pieces. Cook the pasta according to the package directions and as it cooks, sauté the chicken in 1 tablespoon of the oil until cooked through (about 5 minutes).
Set the chicken aside, keeping warm. Add the rest of the oil to the skillet and cook the carrots in it for three minutes. Add in the broccoli and garlic and cook for two more minutes. Return the chicken to the skillet, along with the chicken broth, Parmesan, basil, and salt. Bring the mixture to a boil, then simmer uncovered until the veggies are tender (about 5 minutes).
Drain your paste once done, toss it with the chicken mixture, and serve, topped with extra Parmesan.
