You can do just that with this flavorful fall recipe for apple stuffed chicken breast! To make it, you 'll need:
- 2 boneless and skinless chicken breasts
- 1 tablespoon of Italian-style bread crumbs
- ½ cup of chopped apple (pick your favorite kind of apple!)
- 2 tablespoons of shredded Cheddar cheese
- 1 tablespoon of butter
- ¼ cup of dry white wine
- 1 ½ teaspoons of cornstarch
- 1 tablespoon of fresh parsley, chopped for garnish
Flatten your chicken breasts between two pieces of waxed paper until they're ¼ inch thick.
In a small bowl, stir together the bread crumbs, chopped apple, and shredded cheese. Divide this mixture between the two chicken breasts, spreading them both evenly with it. Roll up the breasts, securing the rolls with toothpicks.
In a medium skillet, melt the butter over medium heat. Brown your stuffed chicken breasts, then add the wine and ¼ cup of water to the skillet. Bring to a simmer, cover, and let cook until the chicken is done (15-20 minutes).
